Ingredients
- Lamb: Quite extravagant but surely is worth it.

Preparation
- Preheat: Have the oven preheated to 325 degrees F.
- Puncture: Use the knife’s tip or meat tenderizer to prick the lamb then insert the garlic slivers.
- Season: Combine the rosemary, dill weed and salt then rub into the lamb.
- Roast: On a rack in roasting pan, place the seasoned lamb. In the preheated oven, roast the lamb for 2 hours, uncovered. After 2 hours roasting, cover it using aluminum foil then let the lamb sit get cooked for another 15 minutes.
Tips and Variations
Other than roasted, you can have the lamb grilled or baked. Slow cooking makes it tender and helps release its natural flavor.
- Bordeaux: You can marinade the lamb for 30 minutes to one hour before roasting. Then season.
- Olive Oil: You can add this to the seasoning for more flavors or use to baste.
Storage
- In the fridge: Place in a shallow container then cover with plastic or aluminum wrap then put in the fridge. This can last for 5 days to a week.
- Freeze: Lay in the freezer to keep it for another 1-2 months. Better to place in a freezer bag with excess air removed.
