Pancakes made of potatoes fried in butter, it’s called Rösti which belongs to Swiss cuisine. Truly a healthy vegetarian dish made up of potatoes and butter cooked in olive oil.
Frying can be healthy, too! This Rösti recipe is a perfect appetizer for vegetarians and even those who doesn’t follow any strict diet. What makes it healthy is the potato and less processed ingredients such as olive oil and unsalted butter. You should not mind eating a lot when you have this on your plate.
Ingredients
- Potatoes: Texture, taste and nutrition. All check.
- Butter: Perfect for pan frying healthy dishes.
- Olive Oil: Aromatic and healthy oil for cooking
- Salt: Optional to add to taste.
Preparation
- Grate: Rinse the potato before peeling then grate using a grater with large holes. Do not rinse after grating to keep the starch.
- Season: Add salt then mix.
- Fry: In a pan, heat the butter and olive oil over a medium heat. Use a soup ladle and scoop from the grated potatoes, lay in the pan then press with the bottom of the ladle or spatula about 1/4 inch thick. Continue to scoop and press as long as it won’t stick to each other while in the pan. Fry for 2-3 minutes each side. Add oil if needed.
- Serve.
Tips and Variations
- Cheese: You may also add cheese on the grated potatoes before frying.
- Spices: Adding basil leaf, coriander or other spices can make your Rösti more flavorful.
Storage
- Freeze: You can have the cooked Rösti for additional month frozen. Just place them in a freezer bag while wrapped with aluminum foil or plastic wrap individually the lay in the freezer.
